Warm Shallot & Balsamic Vinaigrette

2 tbsp olive oil
1/4 cup balsamic vinegar
1 shallot
salt & pepper

Slice shallot into rings. Heat a small amount of the olive oil in a saucepan over medium. Add shallots and saute until just golden. Add balsamic vinegar and lower heat. Simmer till balsamic is reduced by half. Remove from heat, season and whisk in remaining olive oil. Use warm.

yum, this looks so simple. i've got to try it out as i've got a couple of shallots just waiting to be used!
