Fajita Turkey Burgers
Adapted from Cooking Light, July 2006
1/4 cup salsa
2 tablespoons chopped avacado
1 tablespoon chopped cilantro
1 cup fresh breadcrumbs (about 2 slices)
1/2 cup finely chopped red onion
1 cup chopped red pepper
2 tsp taco seasoning (I used Penzey's, but you could also make your own)
1/4 tsp salt
1 tbsp tomato paste
1lb ground turkey
1 egg
4 buns
1. Combine Salsa, avacado and cilantro; set aside.
2. Heat a large skillet over medium high heat. Sautee onion and pepper in olive oil until soft, Season with salt and taco seasoning.
3. Combine ingredients from breadcrumbs through egg. Form into four patties.
4. Heat an oiled skillet over medium high heat. Cook burgers 5 minutes/side ur until cooked. Serve topped with avocado salsa.
